Chickpea & Avocado Sandwich

Method
- Drain and rinse the chickpeas, then pour into a mixing bowl. Mash roughly with a potato masher or fork — aim for a mix of creamy and whole chickpeas to give texture and help the filling hold together.
- Slice the spring onions, olives and cucumber to similar sizes and add to the chickpeas along with the diced avocado.
- In a small bowl, whisk together the lemon juice, coconut yoghurt, English mustard, apple cider vinegar and dill. Season with salt and pepper and taste — adjust seasoning as needed.
- Stir the dressing into the chickpea mixture until everything is evenly coated. Serve immediately in a sandwich, wrap or pitta, or chill for up to 3 days.
