Method

  1. Drain and rinse the chickpeas, then pour into a mixing bowl. Mash roughly with a potato masher or fork — aim for a mix of creamy and whole chickpeas to give texture and help the filling hold together.
  2. Slice the spring onions, olives and cucumber to similar sizes and add to the chickpeas along with the diced avocado.
  3. In a small bowl, whisk together the lemon juice, coconut yoghurt, English mustard, apple cider vinegar and dill. Season with salt and pepper and taste — adjust seasoning as needed.
  4. Stir the dressing into the chickpea mixture until everything is evenly coated. Serve immediately in a sandwich, wrap or pitta, or chill for up to 3 days.
