Garlic Mushroom Tagliatelle

Steps
- Start by bringing a large saucepan of water to the boil and melting 2 tbsp of butter in the frying pan along with a drizzle of oil.
- Meanwhile, slice the shallots and garlic before adding them to the frying pan and stirring occasionally.
- Next, peel or wipe with kitchen paper the mushrooms and slice into strips. Add to the onions along with a tsp of salt and put the lid on the pan. This is the best time to add the tagliatelle to the saucepan to cook.
- Keep stirring the mushrooms to ensure they do not brown and the juices are released. After 2-3 minutes add the rosemary flakes and continue to stir.
- Once the pasta is cooked, drain but retain a mug of the cooking water and add the pasta to the mushroom. If using nutritional yeast, now is the best time to gradually add it along with little splashes of pasta water. Repeat this while stirring to form a creamy sauce. Season to taste and sprinkle over black pepper and parsley if using.
