Method

  1. Slice the smoked tofu 3 times through the middle and once lengthways down the centre. Cut from left to right to create several centimetre-sized pieces.
  2. Place tofu in a lidded container with soy sauce, salt, smoked paprika and cornflour. Shake to coat evenly and set aside to marinate for at least 30 minutes.
  3. Meanwhile, dice the onion and garlic and boil the pasta in salted water. Reserve a ladle of pasta water before draining.
  4. Sauté the onion and garlic in oil until translucent. Add to a blender with the silken tofu, nutritional yeast, black salt and 1 ladle of pasta water. Blend until smooth.
  5. Add the marinated tofu to the same pan the onion was cooked in and fry in butter until crispy.
  6. Pour the blended sauce into the pan with the tofu and add the drained pasta. Stir through, adding pasta water gradually to reach your desired consistency. Serve immediately with black pepper, fresh parsley and sprinkle with nooch.

  • 1 tsp black salt
  • 2 tbsp nutritional yeast
  • 1 tbsp cooking oil
  • black pepper (to taste)
